When making changes to a single gallery item in edit template mode, you can apply those changes to all of the items in the gallery that share its template.
After changing the single item and clicking Apply, a dialogue box will appear asking if you want to apply the changes you made to all the gallery items.
Click the Yes button to apply the changes to all of the gallery items with the same template.
